Carrot Cookies / Jackson Family Recipes

Ingredients

• 3/4 cup sugar
• 3/4 cup shortening
• 1 cup mashed cooked carrots (about 8) (or use canned carrots) and blend
• 1 egg
• 2 tsp baking powder
• 2 cups flour
• 1/4 tsp salt
• 1-1/2 tsp vanilla
• 1/2 cup raisins or nuts or both
