Ingredients

• 2 tbsp olive oil
• 1 large red onion, chopped
• 3 garlic cloves, crushed
• 1½ tsp dried oregano
• ½ tsp ground cinnamon
• ½ tsp paprika
• 1 tbsp tomato purée
• 2 x 400g tins cherry tomatoes
• 2½ tsp sugar (any type)
• 2 x 400g tins butter beans, rinsed and drained
• 8 skin-on and bone-in chicken thighs, excess skin trimmed
• 100g feta, crumbled
• zest of 1 lemon
• small handful of parsley, leaves picked and roughly chopped
