• 16 ounces mushrooms, stems trimmed and cut into ¼" slices
• 1 teaspoon dried oregano
• 6 to 8 parsley stems
• ¼ teaspoon crushed red pepper flakes
• 1 tablespoon tomato paste
• 3 to 4 medium tomatoes, chopped
• 12 cups water
• 1 medium yellow onion, chopped
