Ingredients

• 1/2 cup long grain rice (uncooked)
• 1 cup water
• 2 eggs (large)
• 1/2 cup sugar
• 1/2 cup raisins ( or chopped dried apricots, both optional)
• 2 1/2 cups milk
• 1 teaspoon vanilla
• 1/4 teaspoon salt
• 1/2 teaspoon ground cinnamon ( or nutmeg)
• whipped cream (optional)
