Ingredients

  • 3 Cups old-fashioned oats
  • 2-3 Cups coarsely chopped assorted nuts (almonds, pecans and walnuts work well, but macadamia nuts are interesting as well)
  • ½ cup shredded coconut (unsweetened if possible, but sweetened works)
  • 3 tablespoons (packed) brown sugar
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon or less salt
  • ¼ cup maple syrup
  • 2 tablespoons vegetable/canola oil
  • ¾ cup craisins or raisins (or any dried fruit)
  • Preheat oven to 300 degrees.
  • Mix the first 6 ingredients in a large bowl.
  • Stir maple syrup and oil in saucepan over medium-low heat until smooth.
  • Pour maple mixture over oat mixture, toss.
  • Spread on ungreased baking sheet.
  • Bake until golden, stirring every 10 minutes, for about 40 minutes.
  • In the last 10 minutes, add the dried fruit to the baking sheet.
  • Cool and store in an airtight container.
  • I often double the recipe, using 2-3 baking sheets. The granola stays fresh in the airtight container for a couple of weeks.
