• 2 tsp (10 mL) vegetable oil
• 12 oz (340 g) boneless skinless chicken breasts, cubed
• 1/2 cup (125 mL) chopped onion
• 2 cloves garlic, minced
• 2 tbsp (30 mL) all-purpose flour
• 3/4 tsp (4 mL) pepper
• 1/2 tsp (2 mL) hot pepper flakes (optional)
• 1/2 tsp (2 mL) salt
• 1 can (358 mL) evaporated fat-free milk
• 5 cups (1.25 L) whole wheat penne
• 1/2 cup (125 mL) chopped sweet red pepper (optional)
• 1 1/2 tsp (7 mL) dried basil or 1/3 cup (80 mL) shredded fresh
• 2 tbsp (30 mL) lemon juice
• 2 green onions, chopped
• 1/4 cup (50 mL) grated Parmesan Cheese
