- 1 pound pasture-raised Ground Chorizo or Chorizo Grillers, casings removed
- 1 tsp. cooking oil
- 8 oz. freshly shredded Monterey Jack cheese
- 8 oz. freshly shredded Pepper Jack cheese
- ½ large sweet onion, chopped
- 2 poblano peppers, seeded and chopped*
- 4-5 cloves garlic, minced
- 2-3 medium tomatoes, diced - divided
- 1 cup corn; frozen or fresh
- 1/8 cup diced pickled jalapenos*
- 2 Tbsp. flour
- 1 ¼ cup milk
- ½ cup sour cream
- Chopped green onion or cilantro for garnish
- Chili powder for garnish
- Salt to taste
