Bolognese recipe by Shaheda

Ingredients

• 1 tablespoon olive oil
• 2 medium onions finely chopped
• 2 carrots finely chopped
• 2 Celery sticks finely chopped
• 3 garlic cloves minced
• 2-3 rosemary sprigs finely chopped
• 500g beef mince
• 2 x 400g canned tomatoes
• 1 small bunch basil - ¾ chopped + remainder for garnishing
• 1 teaspoon oregano
• 2 bay leaves
• 2 tablespoons tomato puree
• 1 beef stock cube
• 1 red chillie finely chopped (optional)
• 125ml red wine vinegar
• 6 cherry tomatoes halved
• 75g freshly grated parmesan cheese
• 400g spaghetti
