Thomas' Carroty Cake

Ingredients

• 250 g light soft brown sugar
• 250 ml sunflower or vegetable oil
• 3 large eggs, lightly beaten
• 2 tsp vanilla extract
• 250 g self-raising flour
• 1 tsp baking powder
• ½ tsp salt
• 1 tsp mixed spice
• 1 tsp vanilla extract
• 1–2 tsp grated orange zest
• 300 g carrots, peeled and coarsely grated
• 100 g sultanas
• 75 g walnut pieces (optional – Thomas would not allow these in his cake)
• 150 g full-fat cream cheese
• 40 g unsalted butter, softened
• 1 tbsp orange juice
• 500 g icing sugar
