• 1 medium Yellow onion
• 2 can(s) (13oz) Diced tomatoes, canned
• 2 can (15oz) White kidney beans, canned
• 3 cup Vegetable stock/broth, low sodium
• 2 cup Baby spinach
• 1 cup Rotini, dry
• 2 dash Salt and pepper
