Ingredients

• 6 English muffins, split in half
• Butter for muffins and skillet
• 1/2 -3/4 pound sausage, cooked and crumbled
• 4-6 slices bacon, cooked and crumbled
• 1/2 red bell pepper, seeded and chopped
• 1/2 medium onion, chopped (optional)
• 6-8 eggs, beaten
• 1 1/2 cups shredded Mozzarella cheese
