This can also be made with regular lemons. I did not want to make tarts etc, so I put it into the freezer and it made a wonderful gelato.

- 1/3 cup unsalted butter (at room temp)

- 3 egg yolks (at room temp)
- 1/8 teaspoon salt
- 2/3 cup lemon juice (meyer, or regular lemon juice)
