• 3 tbsp. commercial moonshine or grappa, divided

• 2 tbsp. water
• 3 tbsp. cornstarch
• 1 tbsp. butter
• 1/2 tsp. salt
• 4 cups all-purpose flour
• 2 1/2 tsp. kosher salt
• 1 cup vegetable shortening or good-quality lard
• 3/4 to 1 cup ice water
• 1 egg
• Oil for frying
