Sopa de Fideo – The Gourmet Gays

Ingredients

• 2 tbsp Olive oil
• 1 Onion finely chopped
• 4 Garlic cloves chopped
• 1 tsp Ground Cumin
• ½ tsp Hot smoked paprika
• ¼ tsp Ground all spice
• 1 tbsp Tomato Puree
• 2 Tins chopped tomatoes
• 750 ml Chicken stock or vegetable stock if making the vegetarian option
• 2 Chicken breasts
• 100 g Fideo, vermicelli or other small pasta
• Salt and pepper to season
• 2 Limes, juiced
• Chopped avocado to serve
• Chopped coriander to serve (optional)
