Four-Meat Meatballs

Ingredients

• 2 Tbsp extra virgin olive oil
• ½ cup finely diced guanciale or pancetta
• 10 cloves garlic, minced
• 1 large Spanish onion , finely diced
• 1 small fennel bulb , finely diced
• 2 Calabrian chilies , chopped (plus 2 Tbsp chili oil from the jar)
• ½ cup chopped sundried tomatoes
• Salt and pepper to taste
• ½ lb. ground pork
• ½ lb. ground veal
• ½ lb. ground beef
• 1¾ cups fresh breadcrumbs
• 2 whole eggs
• 1 cup grated Parmesan cheese
• ½ cup ricotta cheese
• 1 bunch parsley, chopped
