ME MAW’S AWESOME CARROT CAKE - Alabama Farmers Federation

Ingredients

• 2 cups plain flour
• 1/4 teaspoon salt
• 2 teaspoons baking powder
• 1 tablespoon cinnamon
• 1 1/2 cups vegetable oil
• 2 cups sugar
• 4 eggs
• 1 teaspoon vanilla
• 2 1/2 cups grated carrots (do not pack; just push carrots down in cup)
• 1 stick of butter
• 1 (8-ounce) package cream cheese
• 1 (16-ounce) box powdered sugar
• 1 cup chopped pecans
