Ingredients

• 1 egg white
• ¼ cup (50g) granulated sugar
• 1 ½ teaspoons cornstarch
• ½ teaspoon distilled white vinegar
• ½ teaspoon vanilla extract
• Pink food coloring, optional
• 7 tablespoons (100g) unsalted butter
• 1 cup raspberries
• ½ cup (100g) granulated sugar
• 5 egg yolks
• 1 tablespoon lemon juice
• Small pinch of salt
• Zest of ½ lemon
• 1 cup chocolate chips (dark, or a mix of dark and semi-sweet)
• 1 tablespoon coconut oil
• 5-10 strawberries, washed and dried very well
• Fresh raspberries, to serve
