Ingredients

  • 2 to 3 pounds of lamb or goat meat, bone-in and cut into large pieces
  • 2 cups of basmati rice, thoroughly washed and soaked for 30 minutes
  • 4 cups of water or broth, for cooking the rice
  • 1 large onion, thinly sliced
  • 4 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons of ghee or vegetable oil
  • 2 pieces black lime (loomi), dried, crushed for smoky tang
  • 2 teaspoons ground cumin, adds earthiness
  • 2 teaspoons ground coriander, provides citrusy notes
  • 1 teaspoon turmeric powder, for color and mild flavor
  • 1 large cinnamon stick, adds sweet warmth
  • 4-5 pods cardamom, light floral aroma
  • 3-4 whole cloves, pungent and sweet
  • 1 whole bay leaf, slightly floral herb flavor
  • 2 teaspoons salt, essential for seasoning
  • 1 teaspoon black peppercorns, adds heat
