Sour Cream and Onion Dip Gelson's

Ingredients

• 2 Tbsp olive oil
• 1 medium yellow onion, finely chopped
• 2 garlic cloves, finely grated
• 2 Gelson’s organic thyme sprigs
• 1 small shallot, finely chopped
• 1 cup sour cream
• ¼ cup finely chopped chives
• 1 Tbsp fresh lemon juice
• Kosher salt, to taste
• Freshly ground pepper, to taste
