Ingredients

• 500g puff pastry (shop-bought is fine)
• 40 vine-ripened cherry tomatoes
• 2 tbsp vegetable oil
• Large pinch of sea salt
• Freshly ground black pepper
• 1 squidge of honey or 1 tbsp caster sugar
• Handful of breadcrumbs
• Plain flour, for dusting
• 1 egg, lightly beaten
• Small bunch of fresh mint or basil leaves
• 2 tbsp extra-virgin olive oil, for drizzling
