Ingredients

• 2 English cucumbers
• 1 cup (25 mL) white pea beans, drained and rinsed
• 1 small red onion, thinly sliced
• 1 jalapeno, stemmed, seeded, and minced
• 2 tbsp (30 mL) chopped cilantro
• 1 tbsp (15 mL) lemon juice
• 2 tsp (10 mL) sugar
• 1 tsp (5 mL) chaat masala (Indian spice blend)
• 1/2 tsp (2 mL) cumin
• 1/2 tsp (2 mL) each salt and pepper
• 1/4 tsp (1 mL) red chili powder
• ½ cup (125 mL) roasted unsalted peanuts, finely chopped Garnish: chopped fresh cilantro or mint
