Ingredients

  • 1. diced skinless chicken breasts (about 2 per person)
  • *Tip* You can substitute the diced chicken breasts for skinned, boned, diced chicken thighs (about 4 - 5 per person) if you're broke. A small pack of chicken thighs will only cost around £2.00
  • 2. a white onion (finely diced)
  • 3. 3 garlic cloves (roughly chopped)
  • 4. mushrooms (stalks removed, peeled and finely sliced)
  • 5. garlic purée (about half a teaspoon)
  • 6. salt and black pepper (preferably freshly ground)
  • 7. 1 - 2 tins of creamed sweetcorn (I use green giant)
  • 8. rice (long grain or basmati)
  • 9. cooking oil
  • 10. half a pack of smoked streaky bacon cut into small cubes or a small pack of smoked lardons.
  • *Tip* If you're really broke don't use any chicken, just use a full pack of smoked streaky bacon or a large pack or smoked lardons instead.
