Ingredients

• 454g lean minced beef
• 1 red pepper – very finely diced.
• 1 tsp cumin
• 1 tsp mild paprika
• 1 tsp dried oregano leaves
• Salt and freshly ground black pepper
• 400ml passata (or use a tin of chopped tomatoes and blitz with hand blender or food processor until smooth)
• 1 red pepper
• ½ head of shredded iceberg lettuce
• 2 tomatoes, chopped
• 1 carrot, grated
• Grated cheddar cheese
• 1 avocado, peeled and chopped
• Hard and/or soft tacos shells (allow approximately 2 each)
• Sour cream
• Salsa, to serve
