Ingredients

• 500 g broccoli, cut into small florets (steams too)
• 2 tbsp neutral oil
• 1 yellow onion, roughly chopped
• 6 garlic cloves, roughly chopped
• 2 cups vegetable broth
• 1 cups plant-based heavy cream (save some for topping)
• 100 g spinach
• 0.5 tsp cayenne pepper
• salt and pepper to taste
• 60 g pumpkin seeds (for topping)
