viral cucumber salad - TK

Ingredients

• 1 large English (hothouse) cucumber. (or 2 small)
• 1 carrot
• 1/2 shallot. (or about 1/4 small red onion)
• Small handful cilantro, chopped (optional)
• 1/2 jalapeno, chopped (optional)
• Sea Salt to taste
• Sesame seeds for garnish
• 3 tablespoons olive oil
• 3 tablespoons rice vinegar
• 1 teaspoon toasted sesame oil
• 1 teaspoon soy sauce or coconut aminos
