- 100g (4 oz) butter, softened, plus extra for greasing
- 100g (4 oz) dark brown sugar
- 2 free-range eggs
- 175g (6 oz) self-raising flour
- 4 tablespoons milk
- 1 teaspoon ground ginger
- 3 tbsp Roots & Wings Organic Seville Orange Marmalade
- Zest of 1 orange
- 2 bulbs stem ginger, chopped
- 2 teaspoons ginger syrup from the jar
- Clementine segments to decorate (optional)
