Ingredients

• 650g cauliflower, trimmed and roughly chopped
• 1 egg, lightly whisked
• 1/3 cup finely grated parmesan
• ½ cup tomato passata
• ¼ cup store-bought caramelised onion
• 1 bunch asparagus, trimmed and halved lengthways
• 4 zucchini flowers, stamen removed
• 1/2 cup baby spinach leaves
• 1 buffalo mozzarella, torn
• 1 bunch rocket, trimmed
• olive oil, for drizzling
