• 50 grams (1 3/4 ounces) Portuguese chouriço
• 1 medium onion
• 100 ml (1/2 cup) tomato pulp
• 50 ml (1/4 cup) olive oil
• 1 egg yolk
• 1 teaspoon pepper
• 1 teaspoon nutmeg
• 1 teaspoon garlic powder
• 1 teaspoon salt
• 1.2 kg (2 2/3 pounds) russet potatoes (or yukon gold potatoes)
• 1 tablespoon butter or margarine to room temperature
• Juice of half lemon
• 1/2 teaspoon nutmeg
• 1/2 teaspoon pepper
• 350 ml (1 1/2 cups) warm whole milk
• Salt (to taste)
• Water (about 1.5 l (6 cups))
