Blackberry Thyme Spritzer – He Wines She Dines
In a small saucepan, bring the blackberries, water and sugar to a boil. Turn to low heat and let simmer for 10 minutes. Strain blackberries and let syrup cool.

- 4 sprigs of thyme. 3 to mix, 1 for garnish
- 1/3 cup water
- 1/3 cup sugar
- Ice cubes
- Bottle of Champagne or Prosecco
- 2oz of Gin
- Splash of Lemon Juice
