I am not quite sure why this delicious chocolate cake is called by the name of Surabaya, a coastal city in East Java. This recipe was given to me by an Indonesian friend in London, under that name....
Ingredients
- 308 g/11 oz/scant 1½ cups butter
- 3 tbsp apricot jam
- 100 g/3½ oz/3½ squares dark cooking chocolate, or 3 tbsp cocoa
- 308 g/11 oz/scant 1½ cups castor sugar
- 180 g/6½ oz/generous ¾ cup plain/all-purpose flour
- A pinch of salt
- 8 egg whites
- 16 egg yolks
