Ingredients

• 4 cups water
• 1 cup celery, chopped
• 4 cups carrots, chopped
• 1 onion, diced
• 8 cloves garlic, minced
• 1 can diced tomatoes
• 1 tsp dried oregano
• 1 tsp fresh (or dried) thyme
• 2 bay leaves
• pinch cayenne
• salt and pepper, to taste
• 1/2 pound baby spinach, chopped
