- coconut oil, butter or ghee for greasing.
- 550 g zucchini, grated.
- 1 1/2 cup all-purpose gluten-free plain flour.
- 1/2 cup almond meal.
- 1/3 cup raw cacao powder.
- 1/2 teaspoon baking soda.
- 1 teaspoon baking powder.
- 1/2 teaspoon salt.
- 1 teaspoon cinnamon.
- 1/2 cup rice malt syrup.
- 2 eggs.
- 150 g unsalted butter, softened.
- 1 teaspoon vanilla powder.
- cacao nibs and chia seeds, to serve.
