Tree Stump Cookies recipe by Faadila Naveed Ahmad

Ingredients

• 125 g butter
• ½ cup icing sugar
• ¼ cup oil
• 1 teaspoon vanilla essence
• 1 tablespoon cocoa powder
• 1. In a bowl, cream together the butter and icing sugar until smooth.
• 2. Mix in the cornflour, then add oil and vanilla essence.
• 3. Add flour gradually until a soft dough forms.
• 4. Divide the dough into two equal parts.
• 5. Roll out both doughs separately between two sheets of plastic into rectangular shapes.
• 6. Place the plain dough over the cocoa dough and roll tightly into a log using the plastic.
• 7. Freeze for a few minutes until firm.
• 8. Slice the log into rounds. Shape into cookies and use the back of a knife to make bark-like indents along the sides (to resemble tree rings/stumps).
• 9. Bake at 180°C until lightly golden and baked
