Strawberry Cheesecake w/ Danish Rum Balls - Good Food And Treasured Memories

Ingredients

• 3/4 cup graham or Oreo cookie crumbs
• 2 Tbsp butter, melted
• 1 Tbsp sugar OR to taste
• 150 gm + some for garnish fresh strawberries, hulled
• 375 gram cream cheese, softened
• 1/2 cup sugar
• 1/4 cup orange juice
• 1 1/2 tsp lemon juice
• 1 envelope unflavored gelatin powder
• 1/4 cup cold water
• whipped cream, fresh mint leaves, strawberry slices
• 500 grams chocolate cake (leftovers)
• 3 Tbsp raspberry jam
• 1/3 - 1/2 cup SPICED RUM or to taste (It will depend on what proof your rum is.)
• 200 gm dipping chocolate + 1 Tbsp Crisco shortening (Do NOT use butter, margarine or oil)
