• 400g stewing beef
• 1 large onion, chopped
• 1 tbsp olive oil
• 3 cloves garlic, chopped
• 3 tsp chili powder
• 1 tsp ground cumin
• 1 tsp salt
• 400g mixed beans, rinsed and drained
• 1 large sweet potato, peeled and largely cubed
• 200g tinned sweet corn, drained
• 100g roasted peppers in oil, chopped
• 2 green chillies, deseeded and chopped
• 400g chopped tomatoes
• Coriander, as garnish
• Sour cream or grated cheese, to serve (optional)
