- 250g unsalted butter, chopped

- 4 cups (880g) caster (superfine) sugar
- 4 eggs
- 1 cup (250ml) buttermilk
- 2 teaspoons vanilla extract
- 1 cup (220g) caster (superfine) sugar
- 1 cup (250ml) water
- 3 red apples, thinly sliced on a mandoline
- 375g unsalted butter, chopped and softened
- 3 cups (480g) icing (confectioner’s) sugar, sifted
