- 700ml Strong Chicken Stock
- 2 Bay Leaves
- 5 Fresh Thyme Sprigs
- 400ml Bottle Fruity Red Wine – (Shiraz or Malbec would be perfect)
- 1 ½ Tbsp Plain Flour
- 1 Tsp Dijon Mustard
- 1 Red Onion-outer skin removed
- 1 Carrot
- 2 Sticks Celery
- 4 Fat Cloves of Garlic
- 1 Tbsp Blackcurrant Jam
- 100g Longley Farm Salted Butter
- Salt and Pepper to taste
