Ingredients: 2 cups cake flour or 2 cups gluten free cassava or oat flour; 1/2 cups coconut sugar; 2 tsp baking powder; 1/2 tsp ground nutmeg; 1 tsp salt; 3/4 cup buttermilk (3/4 rice milk and mixed 1 tablespoon white vinegar and let sit for 10 minutes to act as buttermilk); 2 large eggs ( 1/4 cup of coconut yogurt or also a substitute would be 2 tablespoons ground flax seed mixed with a bit of water); 2 tablespoon Earths Balance vegan and soy free butter, melted; 1 tsp vanilla
