Ingredients
- 2500 g water
- 10 g lemon juice
- 650 g sugar
- 100 g PreGel Dextrose - Sweetening Agent - 83612
- 150 g PreGel Fruttosa Milk Free® - Cold Process - 302248
- 15 g PreGel SETAGEL®Vellutina® - Sorbitol Paste - 70472
- Mix together all ingredients using an immersion blender.
- Heat the mix to 85ºC/185ºF.
- Pour mix into a batch freezer and freeze according to manufacturer’s instructions.
- Base Fruttosa
- Equipment Pasteurizer
- Process Hot Process
