- 1 cup mashed, PEI potatoes
- 1 cup warm water
- 2 2/3 cups unsalted butter, softened
- 2 cups firmly packed brown sugar
- 1 tsp vanilla extract
- 4 large eggs
- 3/4 cup cocoa powder + 2 tbsp for dusting
- 2 cups all-purpose flour
- 2 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 semi-sweet chocolate chips
- 2 cups of your favourite icing
- Large flake sea salt, such as Maldon, for sprinkling
