• 1 carton (1.25 pounds) Honest Earth® Hash Brown Shredded Potatoes
• 2 quarts hot water
• ½ cup yellow mustard
• ¼ cup red wine vinegar
• 8 ounces hard boiled eggs (chopped)
• 8 ounces celery (chopped)
• 8 ounces scallions (chopped)
• 4 ounces sweet pickle relish
• 2 pounds mayonnaise
• salt and pepper (to taste)
