Baked Chicken Salad - FTC

Ingredients

• 2 tbs olive oil
• 1/2 cup chopped celery
• 1/2 cup chopped green and red peppers mixed
• 1/2 cup sliced mushrooms
• 1/2 cup chopped onions
• Rotisserie chicken
• tsp salt
• 1/2 tsp garlic
• 1 tsp pepper
• 1 can of sliced water chestnuts
• 1 cup of light mayonaise
• 2 tsp butter
• 1 cup of bread crumbs
• 1 cup of shredded sharp cheddar cheese
