• 1 Tablspoon. oil, butter or margarine
• 1 cup chopped onion
• 2 teaspoons minced fresh garlic
• 1 can (14.5-ounce) chicken broth
• 1/4 cup water
• 1 cup uncooked Riceland Long-Grain White Rice
• 1 can (4-ounce) sliced mushrooms, drained
• 1/2 teaspoons dried oregano leaves
• 1/4 teaspoons black pepper
• 1 pkg. (10-ounce) frozen chopped spinach, thawed and squeezed dry*
• 1 Tablespoon Riceland Rice Bran Oil, butter or margarine
• Juice of one lemon
• 3/4 cup (4-ounce) crumbled feta cheese
