My Favorite Roast Chicken with Garlic Lemon Toasts

Ingredients

• 1 whole chicken (approximately 4-5 pounds / 1.8-2.3 kg)
• 4 cloves garlic, minced
• 2 lemons (1 zested and juiced for marinade, and 1 sliced for stuffing)
• 1/4 cup olive oil (60 ml)
• 2 teaspoons fresh rosemary, minced (or 1 teaspoon dried rosemary)
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 4 slices of rustic bread (like ciabatta or sourdough)
• 4 tablespoons unsalted butter, softened (56 g)
• 2 cloves garlic, minced
• Zest of 1 lemon
• 1 tablespoon fresh parsley, chopped (for garnish)
