Maine Lobster Hash, a recipe from Jonathan Cartwright on the Worldwide Gourmet

Ingredients

• 4 poached eggs (poached in simmering water with 10 ml of white vinegar and a pinch of salt)
• 500 ml (2 cups) diced potatoes
• 2 tbsp. butter
• 1 tbsp. olive oil
• 100 g (3 1/2 oz.) cooked lobster meat
• 4 lobster claws
• 250 ml (1 cup) lobster bisque*
• A pinch each of: chives, tarragon, parsley
• Salt and pepper
