Gingerbread Pancakes

Ingredients

• 210 g plain flour
• 60 g Siúcra light golden brown sugar
• 1/2 tsp baking powder
• 1 tsp bicarbonate of soda
• 1/2 tsp salt
• 1 tsp cinnamon
• 1 tsp ground ginger
• 1/2 tsp ground nutmeg
• 1/2 tsp ground cloves
• 100 ml water
• 100 ml brewed coffee, cooled
• 2 large eggs
• 4 tbsp melted butter
• 1 tbsp freshly squeezed lemon juice + the zest of one lemon
