Tuna Stuffed Avocado Recipe

Ingredients

• 5 ounces tuna fish (1 can)
• 1 green onion, minced
• 1 tablespoon red onion, minced
• 1/2 cup frozen peas and carrots
• 1/2 cup frozen corn
• 1 egg , diced, hardboiled
• 1/2 cup tomato, finely chopped
• *Salsa Rosada*
• 2/3 cup mayonnaise
• 1/3 cup ketchup
• 1 tablespoon lemon juice
• 1 tablespoon parsley, minced
• 6 avocados, ripe but firm
• 1 lemon
• 12 lettuce leaves, washed
• 1/4 teaspoon salt
• 1/8 teaspoon lemon pepper, to taste
