• 5 yellow onions, sliced
• 1 sweet onion, sliced
• salt + pepper
• 1/2 cup of white wine or chicken stock
• 3 tbsp flour
• 5 cups beef broth
• 1 cup chicken broth
• 2 thyme sprigs
• 2 bay leaves
• 1 baguette
• 1 cup Gruyere cheese, shredded
