• ¼ c plus 2 tablespoons grated Pecorino Romano
• 3 oz fior di latte mozzarella
• freshly cracked black pepper
• 1-2 eggs, cracked into a small bowl, yolk intact
• extra-virgin olive oil
• zest of 1 lemon
