• 1 lb macaroni
• 3 oz, divided into 1 oz portions unsalted butter
• 2 medium onions, sliced
• 2 cloves garlic, finely chopped
• 1 cup milk stout, like Sand Creek or Lift Bridge
• 1/4 cup all-purpose flour
• 2 cups whole milk
• 1 cup cream
• 1 bay leaf
• 6 oz Sharp Cheddar Cheese, grated
• 6 oz Provolone cheese, grated
• 1 teaspoon nutmeg
• to taste salt and pepper
• 1 cup breadcrumbs
